Ingrediënten voor pizzadeeg

Genoeg deeg voor vier pizza’s

* 25 g verse gist (of 20 g droge gist)
* 2 dl lauw water
* 1 koffielepel zout
* 2 soeplepels olijfolie
* 350 g bloem

Maak het pizzadeeg klaar door de bloem in een grote schaal te doen en vervolgens de gist op te lossen in een schaaltje lauwwarm water. Net als bij het pizzadeeg kan het gistmengsel plakkerig zijn. Kneed het gist voorzichtig door je vingers om het plakken zoveel mogelijk tegen te gaan. Voeg het gistmengsel, zout, olie en bloem toe aan het deeg en kneed het minimaal 15 minuten tot een soepel pizzadeeg wordt vergregen. Maak tot slot een bol van het pizzadeeg en bedek deze met een doek.

TIP: Bewaar pizzadeeg liever warm en vochtig dan koud en droog.

Pizzadeeg te nat of te droog?

Zelf pizzadeeg maken kan de eerste keer lastig zijn. Door wat bloem aan het pizzadeeg toe te voegen wanneer het te nat is, breng je het gemakkelijk terug tot een soepel deeg. Wanneer het pizzadeeg te droog is, voeg dan wat water toe.

Het rijzen van het pizzadeeg

Laat het pizzadeeg 2 tot 3 uur rijzen op middelmatige temperatuur. Kneed het deeg nog even en verdeel het in vier stukken. Rol de stukken uit tot vier dunne cirkels. Strooi wat bloem over de tafel voordat je de garnituur aanbrengt op de pizzabodem zodat het pizzadeeg gemakkelijk te verwijderen is.

Zelf pizzadeeg maken in een brood bak machine Je kunt ook heel makkelijk zelf pizzadeeg maken in een brood bak machine. Om dit pizzadeeg te maken doe je het water in de brood bak machine en voeg je daarna de bloem toe. Maak een klein kuiltje in het midden en doe daar de gist in, dek het af met wat bloem. Voeg vervolgens de overige ingrediënten van het pizzadeeg (suiker, zout en olie) aan de zijkant toe. Zet de broodbakmachine op PIZZA, DOUGH, of DEEG (Dus enkel kneden en rijzen, NIET BAKKEN). Het gehele proces duurt ongeveer een uurtje.

Bereiding van de pizza: De beste pizza’s bak je in twee minuten in een houtgestookte steenoven op minimaal 300 ºC.
